Refreshing Watermelon Salad

If you need something refreshing and easy to prepare on a hot summer day, why not try this watermelon salad? It is absolutely safe in regard to gluten-free and does not only look very good, but also tastes absolutely delicious. It combines the hydrating and juicy nature of watermelon with the crispness of cucumber, the zing of red onion, and the refreshing aroma of mint.

The optional addition of feta cheese provides a creamy and tangy element, while the sliced almonds offer a delightful crunch. Drizzled with the zesty lime dressing, this salad is a perfect summer treat that satisfies your taste buds and nourishes your body without any gluten or added sugars. Enjoy it as a light meal on its own or pair it with grilled chicken or fish for a complete and balanced dish.

Oh, and in my brain fog due to ME/CFS of course I forgot to add the almonds on the pictures. But I am sure you will get the idea!

Ingredients:

  • 4 cups cubed watermelon
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup fresh mint leaves, chopped
  • 1/4 cup crumbled feta cheese (optional, omit for a dairy-free version)
  • 1/4 cup sliced almonds
  • Juice of 1 lime
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

  • Cut the watermelon into bite-sized cubes; remove any seeds if necessary. Place the cubed watermelon in a large mixing bowl.
  • Add the diced cucumber, thinly sliced red onion, and chopped mint leaves to the bowl with the watermelon.
  • Otherwise, crumble the feta cheese into the salad.
  • Add the sliced almonds to the salad for a delightful crunch and nutty flavor.
  • In a small bowl, whisk together the lime juice, extra-virgin olive oil, salt, and pepper. Adjust the seasonings according to your taste preferences.
  • Pour the dressing over the salad and gently toss to ensure all the ingredients are coated evenly.
  • Place the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together. 
  • Serve chilled and enjoy the refreshing and nourishing watermelon salad.
